When I met FitDad, we were both in college, and I was won over by a single possession of his: a bread maker. I had never met anyone in college, especially a guy, who had any domestic appliance, let alone a bread maker. Turns out his make-your-own pizza parties and fresh baked bread made him pretty popular. Smart guy.
Fast forward: We've moved several times since then and I have no idea where that bread maker is. And now I'm embracing my "crunchy" California upbringing and trying my hand at healthy baked bread. My dad passed along this no-knead recipe from Mother Earth News (pretty crunchy, right?). I made it over the past two days with 100% whole wheat flour. It's a little denser than I thought it'd be, but delicious. I personally don't eat a lot of bread because most of it is so highly processed and nutritionally devoid, but I can't wait to make a grilled goat gouda sandwich with it.
As I cleaned up the gluey dough mess from our counters, I did wonder, however, what it was doing to my digestive tract. I toyed with gluten-free when FitBoy was first born and felt much better, but haven't had the resolve to stick with it. Hmmm.
This was also the cheapest loaf of bread ever. You can't go wrong with 4 ingredients, one being water. I may try out some different flours next time, and combine them for a mixed grain bread. Any other ideas to spice it up?
